They all die before befor ethe games begin.  This is evidenced by the fact that th epopulation of all the games is that of a small rural village in the middle of the boondocks, even though at the very least Hyrule castle's surrounding town is supposed to be a bustling metropolis.  Obviously the men were all massacred by Ganon and the women were unable to repopulate the world due to lack of men.  Therefore the Legend of Zelda games are a perpetual case study in the last moments of a dying civilizations in its final throes against oblivion.

You see Ganondorf isn't a person, he's actually an allegory for all that is evil in man and perpetually fighting against the virtues of civilization, steadily weighing in against the need to establish security and allow for the propagation of the self and in extension the self's society, while at the same time caused by the need to quite greedily protect the self and propagate the self.  Shigeru Miyamoto makes the argument that the two forces of the carnal, selfish desire and the virtuous, societal, selfless desire conflict against eachother constantly in normal circumstances and thus when one outweighs the other; as in the beginning of each Zelda game when Ganondorf is undoubtedly in control of the world, civilization is pushed towards the brink of oblivion, and it must react and a unified selfless force must be created; therefore the allegory "Link", to stave off the impending doom of the selfish force "Ganon" and civilization will either recover and light will return to the world until the next timethe balance is upset(you win the game and wait for the next installment) or the selfish force wins out and the world is destroyed(you lose all hearts and don't have anymore faeries in a bottle).

Or nature decides to press the ol' Reset button, which occurs at some point after the Ocarina of Time-Majora's Mask era and before the Wind Waker-Phantom Hourglass era via the Great Flood.

Peach is far superior to the mere wafe of an elf/trannie that is Zelda. Peach doesn't need to dress as a man to get things done. And about the whole kidnapping thing, Maybe she gets off on it. I mean, really, who wants to just hang around an overweight Italian plumber, at least she gets some adventure when Bower takes her. She wears heels, pink, yet can still deck you with a frying pan, a pointy umbrella, a Toad, or even a turnip (daikon?)
